COD IN GREEN SAUCE (6-8 people)
1 kg. cod in pieces.
1 large onion.
20 grams of flour.
1/4 of a litre of white wine.
1/2 litre of water.
1 tablespoon chopped parsley.
2 cloves of garlic.
Once drained cod, dip each piece in flour and fry it in hot oil.
Put everything in an earthenware dish or in a glass baking dish that it is fire resistant.
For the sauce:
In a pan put oil and when hot, put the finely chopped onion to fry lightly until golden.
While brown the onion, crushed in mortar peeled garlic and parsley.
Add to the sautéed onion and garlic, parsley, white wine and water.
Pass all through the blender and pour the sauce over the cod.
Put on low heat for about 10 minutes and stir it occasionally to prevent sticking.
Sprinkle with a little chopped parsley and serve in the same bowl.
